  • Asparagus (2012/3/21)
    Spring has arrived and with it fresh asparagus, try this great recipe for dinner. 1 bunch of medium sized asparagus, about 1 lb 2 Tbsp of the most exquisite extra virgin olive oil 2 Tbsp freshly grated Parmesan cheese 1 teaspoon lemon zest - freshly grated lemon rind Salt and freshly ground black pepper Rinse aspaaragus thoroughly, break off any tough, white bottoms and discard. Cut into 1 to 2 inch sections, slicing the asparagus at a slight diagonal. Fill a medium sized saucepan half way with water, bring to a boil. Add the asparagus and reduce heat slightly to a simmer. Parboil the asparagus for exactly 2 minutes. Drain the hot water. While the asparagus are still hot, toss them in a bowl with the olive oil, Parmesan, and lemon rind. Salt and pepper to taste.   • Peachy Chicken (2012/3/1)
    3 chicken breasts, halved 1/2 cup flour salt and pepper to taste 2 Tablespoons butter 2Tablespoons cooking oil 1 1/2 cups orange juice 2 Tablespoons brown sugar 1 teaspoon basil 1/2 teaspoon nutmeg 1 can (16 oz.)peach halves, drained. Shake chicken pieces in bag with flour and salt and pepper; brown in butter and oil. Place browned chicken in a greased 3-quart casserole dish. Combine orange juice with vinegar, sugar, basil and nutmeg and pour over chicken. Cover and bake at 375 for 1 hour and 15 minutes or until tender. Baste often. Then place peach halves between chicken pieces, baste well and bake uncovered for 15 minutes longer. Serves 6

    Paddle Trips are scheduled every day from Saturday, 7 April through Sundayt, 7 May. You will be accompanied by a leader famliar with the ecology of the area and may see eagles, nesting waterfowl, prothonotary warblers...who knows? Kayaks and gear are provided. If you are not an experienced kayaker, trip leaders will help you learn. Trips begin near Saluda, VA at 9:00 a.m. and usually last till 1:30 or 2:00. Bring a picnic to eat on the river. Mix together and set aside 2 cups sifted all-purpose flour l 2 tablespoons sugar 1 Tablespoon baking powder ½ teaspoon salt ¼ cup butter or margarine Mix together and then add to dry ingredients – stir just until moistened 1 cup milk 1 egg, beaten ½ cup apples, peeled and chopped Fill 12 greased or paper lined muffin tins 2/3 full Top with ½ cup chopped apples, peeled and chopped ½ cup chopped pecans Mix together and sprinkle a teaspoon of mixture over each muffin ¼ cup sugar ½ teaspoon ground cinnamon Bake 425 degrees for 25 minutes, or until lightly browned.

She has made and designed plant holders of jute and pottery. Her watercolor and oil paintings have been displayed and sold in a gallery located in Williamsburg, Virginia. After attending several jewelry making classes she began designing and making her own line of jewelry.     It's apple picking time and time to enjoy some great recipes. Apple Dumplings 2 cups all-purpose flour ½ cup butter or margarine, melted 2 teaspoons baking powder 1 teaspoon ground cinnamon 1 teaspoon salt 4 Tablespoons brown sugar 1 Tablespoon butter or margarine, 6 tart apples, peeled, cored and chopped Softened Apple Dumpling Sauce 1 Tablespoon shortening 1 cup milk Place flour, baking powder and salt in large mixing bowl. Cut in butter and shortening until mixture resembles coarse meal. Gradually add milk to make a soft dough. Roll dough into a ¼” thick rectangle on a lightly floured surface.   • Zucchini Scramble (2011/7/23)
    This recipe is good for breakfast, I serve it at the Dragon Run Inn, or a quick dinner on the run. 2 small zucchini sliced thin (can also use half and half yellow squash) 1 small onion thinly sliced 1 Tablespoon finely chopped fresh basil 1 Tablespoon finely chopped fresh oregano 2 Tablespoons butter Salt and pepper to taste 3 Tablespoons of bacon pieces and/or a half cup chopped ham 4 eggs, beaten Saute zucchini and onion in butter until tender, add herbs, bacon pieces and season with salt and pepper. Add the eggs; cook and stir until set. Sprinkle with shredded cheddar cheese. Serves 2

    August 8, 2011 will mark the Annual Buyboat Homecoming in Urbanna. Urbanna will be the final stop on the CBBA, Chesapeake Bay Buyboat Association. cruise. Much like other reunions this will be a gathering of old oyster buyboats that have gone into retirement. Buyboats have been around since the early 1900's and average between 55 and 65 feet in length, with the largest still afloat being the O.A. Bloxom, measuring 84 feet. Buyboats have been used to haul all type of goods before the onset of bridges and modern roads. The CBBA consists of two fleets - northern and southern - and each year the buyboat cruises switches off traveling either north or south. This year is the south's turn.   • Zucchini Bread (2011/7/7)
    Summertime is time to enjoy fresh vegetables from the garden and one of my guests favorites is zucchini bread. Blend: 4 beaten eggs 1 cup vegetable oil 2 cups sugar 1 tsp. vanilla Add: 3 ½ cups flour 1 l/2 tsp. salt 1 ½ tsp. baking soda ¾ tsp. baking powder 1 tsp. cinnamon Mix well and add: 2 cups grated unpeeled zucchini 1 cup chopped pecans 1 cup raisins Mix well and pour into 2 large or 3 small loaf pans. Bake at 350 for 45 minutes for small loaves or 55 minutes for large loaves
